fix: restore README star history chart

[OctoBored]

The README star history chart is currently broken due to GitHub stargazer API restrictions that the previous provider depends on. This updates the chart image and its wrapping link to a working provider so the chart renders again.

Note: this leaves the existing /badge references untouched.
