docs: add Soroswap Stellar Wave Hub research submission

Overview

This PR adds a research-driven Stellar Wave Hub submission for Soroswap, a Soroban-native AMM DEX on the Stellar Network. The submission includes an original 342-word project profile, independent sourcing from official documentation, GitHub, and Stellar Expert, on-chain verification of Soroswap's Soroban contracts, an accurate DeFi/DEX categorization, and supporting screenshots. Before submission, the project was confirmed as a Stellar Wave Program participant and confirmed absent from Stellar Wave Hub to avoid duplication.
