This commit adds the ability to publish a dynamic library for iOS. This is accomplished by: - Adding a new `scripts/build_libedax_ios.sh` script to build the iOS dylib. - Modifying the `.github/workflows/create_release.yaml` to add an iOS build to the matrix.
