why is this using a v1.12 image, also we never hard code the versions, we use a version variable

Hello,
After finally understanding how to deploy a Talos single instance cluster on SCW, and understanding some caveats, I propose to update the documentation to be simpler and more up-to-date.
I am not very familiar with .mdx documentation, so don't hesitate to tell me how can I test / render the documentation to see if everything look fine. Or just update the edits directly :)
