Add Hubble, Galexie, etc to table

The docs have a table for attributes of RPC and Horizon, then immediately below it mention Hubble and Galexie. It's a bit odd that Hubble and Galexie aren't included in the table so that they can be compared too.

I think we should structure this page and the table not just as APIs, but Data products, and include them all in the table and include attributes that communicate whether they are an API, or other form of data product.

Decision needed: which page holds one comparison table of all Stellar data products, and which products go in it?

The report is still correct. docs/data/apis/README.mdx compares RPC and Horizon only. The footnote below the table names Hubble and Galexie but does not compare them.

Options for the table:

1. Put it on the Data Overview page (docs/data/README.mdx). That page already introduces all four data categories. No URL changes.
2. Retitle the APIs page to "Data Products" and keep the table there. This needs a sidebar change and a redirect for /docs/data/apis.
3. Add Hubble and Galexie rows plus a "Type" column to the current table. The page keeps the title "APIs Overview".

Also decide the product list. RPC, Horizon, Hubble and Galexie are clear. Please say if you want the Ingest SDK, Processors, Portfolio APIs, oracles and analytics providers too.

Notes:

• Hubble and Galexie are both current. Neither is deprecated.
• "Data product" is already the docs' own term. The Lab Horizon page links "Stellar RPC or another data product" to the APIs page today.
• This issue carries good first issue, so I did not open a PR.

I am thinking Option 1 is best here - a comparison table of SDF data products (RPC, Horizon, Hubble, Galexie) on the Data Overview page, with Type and Interface rows so readers can tell an API from a warehouse or export tool. No URL changes. Third-party providers stay on their own list pages. It would look something like this:
