chore: update to latest v5, eject v5, docs link + video move

The docs button headed straight to the video, I think it's better if it goes to the github repo and the video is in the README as an additional explainer.

Updated to latest SD v5 so it's easier to use as a debugger/reproduction tool for us at style-dictionary.

I also updated some outdated things in the eject utility.
