chore: bump fusio to 0.6.1

Summary

• include the S3 Express support branch changes needed by Tonbo
• bump the Fusio workspace and internal Fusio crate dependencies from 0.6.0 to 0.6.1

Why

Tonbo 0.4.0-a1 depends on current Fusio APIs that are not available in the published 0.6.0 crates, including AmazonS3Builder::s3_express.

Validation

• env RUSTC_WRAPPER= cargo publish -p fusio-core --dry-run --allow-dirty

Expected dry-run limitation before publishing:

• fusio, fusio-manifest, and fusio-parquet package verification cannot fully resolve until the preceding 0.6.1 crates are visible on crates.io.
• After merge, publish in order:
  1. fusio-core
  2. fusio
  3. fusio-manifest
  4. fusio-parquet
