Overhaul docs and simplify build

I started taking another look at this and thought it might be time to start looking at the docs process which is a bit convoluted.

• It changes to ViteJS for a much faster developer experience for watching changes
• Tidies up some of the general behaviour
• It allows you to control the data via the URL
  • When running locally you to load one of the test/fixture files by adding a hash, eg http://localhost:5173/#hole-hole
  • Or load a remote url like http://localhost:5173/#https://some/data.geojson

In doing the above I also looked at the overall build which had some strange remnants in there, so I updated it a little
