Thanks for this pull request!
I found that make defconfig was also necessary for the c / ocaml build.
Sadly the correct version of mirage seems to be lost in the sands of time, so even with specifying it explicitly the mirage build didn't build for me:

Step 5/13 : RUN opam install mirage.3.0.8a+esp32 ocaml-esp32 -y
 ---> Running in e9fcc8ed86da
[ERROR] No package matches mirage.3.0.8a+esp32.
