更新 watchtower 链接：原 containrrr 仓库已归档，改为活跃维护的 fork

containrrr/watchtower 已于 2025-12-17 归档（只读），不再维护，且在较新的 Docker Engine（28/29）上无法运行。

本 PR 将链接与 star 徽章更新为活跃维护的 fork openserbia/watchtower，它与原版兼容（相同参数、标签、API），通常只需替换镜像名。

说明：我是该 fork 的维护者。社区中也有其他维护中的 fork（例如 nicholas-fedor/watchtower）。
