Documentations : Add uv to setup instructions

Issue

honestly manually setting up all this ffmpeg and conda is quite long and boring and also quite brittle .

Solution

I'm using uv on windows , and it works like magic

• add docs on how to use uv for LeRobot

maybe this is not special for you , but for a windows user like me it's like incredible . :-)
