Summary
Update docker setup to build and run on DGX Spark and using Isaac Sim 5.1.
Detailed description
Isaac Sim 5.1 introduces few changes to it's base container + arm64 architecture support (currently only DGX Spark). This MR updates docker setup to use 5.1 and makes it compatible with DGX Spark.
Theoretically, core functionality should not be affected.
